After harvesting, the agave hearts – known as piñas – are gently cooked to release their natural sugars. This is followed by fermentation and a double distillation, which creates the characteristic style of this 100% agave tequila. As a Tequila Reposado, El Jimador then matures for several months in oak barrels, developing additional depth and a particularly harmonious balance between fresh agave and gentle woody notes.
