Eligo Grappa, produced by the renowned Ornellaia winery, represents excellence in the art of grappa production. For the production of this noble distillate, carefully selected grapes of the Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot varieties are used. Distillation traditionally takes place in copper pot stills, a method known for its ability to preserve the fine aromas and purity of the grappa.

After distillation, the grappa matures for three years in former Ornellaia wine barrels, which not only gives it depth and complexity but also subtle woody notes that enrich the flavor profile. To further enhance the quality, this grappa is then blended with selected grappas from older stocks.
