Only Espadín agave is used for production, which is slowly cooked in traditional earth pits over open fires – a process that gives the mezcal its characteristic smoky base note. After fermentation and distillation, it is bottled without barrel aging, thus preserving the Lajita Blanco's clear, agave-typical aromas in their unadulterated form.
