Cork, located on the southern coast of Ireland, is home to the picturesque town of Skibbereen, traversed by the River Ilen. This region is known for its scenic beauty and cultural significance, particularly in the tradition of whiskey production. In 2007, three friends founded the West Cork Distillery in Skibbereen. This small, independent distillery is characterized by the production of high-quality whiskeys, crafted with great care and artisanal skill.

From the outset, the founders focused on quality and tradition, combined with an innovative approach. West Cork Distillery uses crystal-clear spring water and carefully selected grains. This commitment reflects the spirit of innovation and craftsmanship that is characteristic of the Irish whiskey industry.

As with other West Cork bottlings, this whiskey is also triple distilled. To ensure optimal interaction between the copper of the pot stills and the rising vapor, the stills at West Cork are only half-filled.

The West Cork Irish IPA CASK FINISH Blended Whiskey matures in first-fill Bourbon casks and receives a special finish in IPA casks. These beer casks come from Black's Brewery in Kinsale and impart an exceptional taste and robust aromas to the whiskey.
