The Villa Sandi winery, located in the heart of the Prosecco region of Veneto, Italy, is a renowned winery known for its high-quality sparkling and still wines. Villa Sandi is particularly famous for its Prosecco production. The grapes grow on the hilly landscapes of Valdobbiadene, where the microclimate and mineral-rich soils provide ideal growing conditions. The grapes are carefully hand-picked to ensure the best possible quality. Sustainability and environmental protection are paramount, which is underscored by modern techniques and numerous certifications.

Villa Sandi Il Fresco Prosecco Biologico Organic is made from 100% Glera grapes, harvested in a ten-day period in September under the best conditions. The grapes are gently pressed in a pneumatic press, and the resulting must is, after an initial racking, filled into temperature-controlled tanks where it remains until further processing.

The must is then inoculated with specially selected Villa Sandi yeast cultures and filled into tanks. Fermentation takes place at a controlled temperature of 15-16°C to optimally enhance the aromas of the harvest. Once the desired alcohol and sugar content is reached, fermentation is stopped by cooling, and after a short settling period, the sparkling wine is ready for bottling. The secondary fermentation is carried out in such a way that the entire aromatic heritage is preserved and the typical floral and fruity aromas of the variety and the area can fully develop.
