Harvesting takes place in the second ten days of September, when the grapes have reached their ideal balance. After gentle pressing, the must is clarified by static decantation. A portion of the must is stored at a low temperature, while the remaining portion is fermented under temperature control and then aged in stainless steel tanks. The second fermentation in pressurized tanks with selected yeasts gives this Prosecco Brut its characteristic vivacity. After bottling, the wine rests for several weeks in refrigerated storage rooms to complete its harmonious structure.
