This particular agave variety requires at least 20 years to fully mature before it is used for Mezcal production.

Under the guidance of Maestro Mezcalero Arturo Mártinez, production takes place according to traditional methods. The agave hearts are slowly roasted in earthen pits with wood and lava stones to develop the typical smoky notes. After fermentation with natural yeast, double distillation takes place in copper stills, which particularly highlights the complex aromas of this extraordinary agave.
