For this bottling, the Nonino family exclusively uses high-quality, single-varietal Monovitigno grape pomace, which is carefully destemmed, freshly processed, and deliberately kept soft. The selection of the pomace is highly dependent on the respective wine vintage and guarantees an authentic, unadulterated style.


Fermentation takes place anaerobically without additives in stainless steel tanks to fully preserve the varietal aromas. This is immediately followed by discontinuous distillation in exclusive copper steam stills, renewed by Benito Nonino, where the heads and tails are consistently separated. This very slow distillation process ensures that the volatile, aroma-forming components can evaporate and condense optimally. After distillation, the grappa rests for 6 months to a year in stainless steel, creating harmony and balance without distorting the pure varietal character.
