For this Mezcal, 100% Espadín agaves are traditionally processed: The agave hearts (piñas) are roasted in earth pits over a wood fire, then ground, fermented, and double distilled. This is followed by a barrel aging of at least 13 months in new and used American oak barrels, which develops soft vanilla, caramel, and smoky notes in the Mezcal that are perfectly balanced.
