Ampersand Distilling Company is a family-run, craft distillery, idyllically located on a five-acre farm in the Cowichan Valley. Stephen and Jeremy Schacht, a father-son duo with engineering backgrounds, use their extensive knowledge of science and traditional distillation techniques to produce exceptional spirits in their handcrafted distillery.

In 2007, Stephen and Ramona moved to the Cowichan Valley to establish a vegetable farm. Their son Jeremy, fascinated by the art of distillation, sought a creative way to use his process engineering degree. The result of these efforts is Ampersand Distilling Company – a new family business that successfully combines innovation and tradition.
