The Demerara Distillery in Guyana has been deeply rooted in the history of sugar and rum production since the 17th century. It is world-renowned for its wooden pot still process and the resulting high-quality rums.

A particular highlight is the rum distilled in 2005 from the rare Versailles Single Wooden Pot Still, the last operating facility of its kind worldwide. After distillation, the rum matured for eight years in American ex-bourbon casks before undergoing a further eight years of special cask finishing in French oak casks that had previously held Sauternes sweet wines.
