Edradour, recognized as Scotland's smallest traditional distillery since its founding around 1825, largely operates using 19th-century methods. As a unique preservation of the old farmhouse distillery style, Edradour produces 12 casks of whisky weekly. Owned by Andrew Symington, founder of Signatory, since 2002, Edradour has expanded its range with new bottlings, including peated malts under the name Ballechin.

Signatory founder Andrew Symington works closely with the South Tyrolean winery St. Michael-Eppan, which has led to a fascinating series of single cask bottlings from red wine casks. In this particular case, a distinctive Cabernet Sauvignon was used for pre-filling, giving the whisky unique aromas and characteristics.
