Due to this long tradition and its historical value, Sibona holds the prestigious "Licenza di Distillazione No. 1". This rare distillation license is granted by the Italian tax authorities only to distilleries that stand out due to their exceptional history and consistent quality. The Sibona Grappa di Chardonnay is a fine pomace brandy, produced exclusively from single-varietal pomace. For its production, Sibona uses fresh pomace from Chardonnay grapes, which come from the renowned Langhe and Roero region, an area known worldwide for its high-quality grapes.

After delivery, the pomace is immediately processed to preserve its freshness. The distillation is carried out gently and slowly in traditional copper pot stills to retain the full aroma of the grapes. The distillate is then allowed to rest in stainless steel tanks to develop harmoniously and round off its character. These careful processes result in a delicate Grappa that impressively reflects both the elegance of the Chardonnay grapes and the artisanal tradition of the distillery.
