The Antica Distilleria Domenico Sibona S.p.A. is located in the heart of Piedmont, specifically in Piobesi d'Alba, right in the region where some of the best Piedmontese wines originate. It is one of the oldest and most traditional distilleries in Piedmont, which gives it a special status in Italian distilling culture.

Due to this long tradition and its historical value, Sibona holds the prestigious "Licenza di Distillazione No. 1". This rare distilling license is only granted by the Italian tax authorities to distilleries that stand out due to their exceptional history and consistent quality. The Grappa di Barolo Invecchiata 5 Anni is made from fresh Nebbiolo pomace, which is quickly delivered to the production facility and immediately distilled using the continuous distillation process. This early processing and the distillation process contribute significantly to the high quality of the Grappa. After distillation, the distillate first matures for one year in stainless steel barrels before being transferred to small oak barriques.

The Grappa is a blend of the best single-varietal Grappas from different vintages, which are first blended and then aged for another year. The subsequent five-year maturation in barrique barrels gives it a deep amber color and distinct woody notes.
