Mount Gay Estate, located on the plateau of the Upper Coral Reef Terrace in St. Lucy, Barbados, was uplifted from the sea approximately 400,000 years ago, offering an impressive elevation of 150m in the east and 105m in the west. The estate's loamy soil lends a special quality to the sugarcane grown there.

Mount Gay Single Estate Series Rum #2 was produced from 100% molasses derived from sugarcane grown on the Mount Gay Estate in St. Lucy, Barbados. This molasses is characterized by a particularly high sugar content of 72% and was produced in 2018. An in-house yeast, specially cultivated on the Mount Gay Estate, is used for production. Fermentation takes an exceptionally long time – 9 days compared to the usual 4 days. This prolonged fermentation leads to a secondary fermentation, which gives the rum a subtle coloration and distinctive Barbadian flavors, including pineapple and guava.

The rum is 100% pot still distilled and bottled in a limited edition of only 5,418 numbered bottles.
