The foundation of this mezcal is the rare Cenizo agave (Durangensis), which thrives in the highlands of Durango. This wild agave species takes up to 12 years to reach full maturity. After harvesting, the hearts (piñas) are cooked in earthen ovens over wood fires, then crushed with traditional stone mills (tahona) and fermented in open wooden vats. Double distillation takes place in copper stills, resulting in a particularly pure and characterful distillate. With an alcohol content of 40% Vol., Burrito Fiestero Mezcal is pleasantly accessible without losing its depth and expressiveness.
