The EVO Fumo is a characterful Grappa Riserva that combines Italian distillation artistry with an unusually smoky note. Produced from a complex cuvée of various grape varieties – including Manzoni Bianco, Glera (Prosecco), and Cabernet Sauvignon – the result is a highly complex distillate with unique depth. What makes this Grappa special is the innovative use of peated pomace, which was treated before distillation and gives the distillate a peaty-smoky dimension, otherwise only known from the world of whisky.

The maturation takes place in a selection of different cask types, including toasted oak, which further enhances the aromatic complexity. Although Italian law allows Grappa to be called a Riserva after at least 18 months of aging, distillates aged up to 4 years were blended for the composition of the EVO Grappa Fumo. The result is a balanced, powerful, and profound Grappa that impresses with its smoky elegance and fine structure.
