The grapes are fermented in stainless steel tanks at a temperature-controlled 15°C, with fermentation deliberately interrupted at a residual sugar content of 73.3 g/l – thus creating the typical, elegant interplay of sweetness and acidity. Afterwards, the wine matures on fine lees for two months, which gives it a creamy texture and additional richness. With 10.5% Vol. alcohol, the Spätlese Weiß 2023 is pleasantly light, yet dense and aromatically intense. Ready to drink from 2025, the wine has aging potential until at least 2030.
