The base wine then undergoes a second fermentation in pressure tanks, where it develops its fine perlage under controlled conditions (14–16 °C). Once the desired pressure is reached, the wine is stabilized at –4 °C and then rests for about another month on its fine lees. This process gives the Ribolla Gialla Brut its freshness, clarity, and elegance.
