Description
The AI GALLI Prosecco Extra Dry DOC is an elegant, finely sparkling wine made from 100% Glera, sourced from the estate's own vineyards in Pramaggiore – a particularly quality-oriented cultivation area in eastern Veneto. The vines grow on medium-density clay soils, which gives the Prosecco additional structure and finesse. This sparkling wine is produced using the Charmat method, which gives it its fresh perlage and aromatic brilliance.
The hand-picked grapes are gently pressed and cold-decanted to preserve the purity of the aromas. The must is fermented at 18–20°C with selected yeasts for about 10 days. The second fermentation for effervescence takes place in a pressure tank at 14–16°C over 18–20 days. After reaching a pressure of approx. 6 bar, the temperature is lowered to –4°C to stop the fermentation process and stabilize the wine. This is followed by a one-month maturation on fine lees before the Prosecco is filtered and bottled under isobaric conditions.
With an alcohol content of 11% vol., this Extra Dry Prosecco stands for balanced freshness, delicate fruit, and great elegance – a typical representative of the Venetian style, which convinces with its aromatic diversity and gentle perlage.
