The AI GALLI Pinot Grigio DOC 2024 is a single-varietal white wine made from 100% Pinot Grigio, expressing its origins in the renowned Pramaggiore area of eastern Veneto with typical finesse and freshness. The grapes come from AI GALLI's own vineyards, thriving on medium-density, clayey soils – a soil structure that is ideal for elegant, structured white wines with clear fruit and mineral freshness.

The vinification follows classic white wine production methods. The grapes are gently pressed, with the must immediately separated from the skins to avoid unwanted amber discoloration – typical of the Pinot Grigio grape. Temperature-controlled fermentation at 18–20°C lasts around ten days and is carried out using carefully selected yeasts. Subsequently, the wine matures for several months on its fine lees in stainless steel tanks before being bottled. Two months of bottle aging ensure additional refinement.
