This mezcal is made from 100% Espadín agave (Agave angustifolia), which takes between 8 and 12 years to fully mature. After the traditional harvest, the agave hearts are cooked in underground earth ovens with wood fires, then ground in stone mills (tahona), and fermented in open wooden vats. Distillation takes place in small copper pot stills, resulting in an intense, multi-layered, and authentic character. With an alcohol content of 48.4% Vol., the mezcal is robust, complex, and full of expression.
