Produced by the traditional Ippongi Kubohonten, this premium sake from Japan represents authentic brewing artistry and the typical freshness of a Shiboritate Namazake. The term Shiboritate means that the sake is bottled directly after pressing, while Namazake indicates that it has not been pasteurized. This fully preserves the original, particularly lively character of this rice sake.
Production begins every year at the beginning of October, immediately after the rice harvest, when the new brewing season starts. By the end of October, the first fermentation tank is ready for pressing. The sake obtained from this forms the first vintage of the season, which is bottled directly. The basis for this Japanese rice wine is the high-quality Gohyakumangoku rice variety, known for its elegant structure and clear aromatics. A rice polishing ratio of 65% ensures a balanced interplay of fruit, freshness, and structure. With 17.9% Vol. alcohol, this Shiboritate Namazake presents itself as powerful, lively, and aromatic.
