Whilst Espadín provides a clear agave structure and a balanced smokiness, the rarer Tobalá adds floral, fruity and complex notes. Loma Noble relies on traditional production methods and the sustainable management of its agave stocks. The ripe piñas are slowly cooked in underground earth ovens using firewood and volcanic stones, allowing the characteristic blend of roasted agave, smoke and mineral nuances to develop.

After cooking, the agaves are traditionally crushed using a stone tahona before undergoing natural fermentation with wild yeasts in open wooden vats.
