Junmai Daiginjo Genshu represents one of the purest forms of sake and is characterized by a complex aroma profile. This sake offers notes of melon, peach, freshly cut grass, and sage, while the taste features peach and tropical accents like papaya, lemon, and bitter orange. A subtle umami undertone adds depth.

Sake is divided into six categories based on the polishing ratio of the rice grain. Junmai Daiginjo Genshu, made from high-quality Yamadanishiki rice from Hyogo, is polished down to 38% of its core, which gives it complex flavor nuances. Compared to wine, which often has 200 flavor nuances, this sake can offer up to 400 nuances. With an alcohol content of 16% and a long, harmonious finish, this sake combines sweetness with sophistication.
