In 1821, William Smith founded the Wolfburn Distillery on the outskirts of Thurso, named after a nearby stream. Built from robust Caithness flagstone, the distillery quickly developed into a significant malt whisky producer. The distillery remained family-owned until the 1850s and may have operated sporadically into the 1860s, although it was marked as a ruin on a map in 1872. A new building was erected near the old site.

The distillery's logo, designed in 2011, is based on a 16th-century drawing by Conrad Gessner and refers to the sea wolf, a local legend said to bring good fortune. The logo symbolizes the distillery's deep connection to Scottish culture and history.

This subtly peated whisky is made from malted barley, gently infused with smoke during the drying process. It reflects the historical distilling tradition of the 19th century, where peat was predominantly used for fuel. After careful distillation, the whisky matures in specially constructed warehouses. The final result is an exceptionally smooth and full-bodied whisky.
