Plantation Rums have long ceased to be an insider tip. The excellent rums are mainly collected in the Caribbean and also in South America and then brought to France, where they receive their final touch. In Ars, France, the rum is subsequently stored for several months in small, discarded oak cognac barrels. This type of maturation is called "Double Ageing", a technique that was already used in the 18th and 19th centuries.

Plantation Rum Panama 2007 is produced from molasses and a three-day fermentation at the Alcoholes Del Istmo Distillery.

In Panama, this rum matures for 11 years in Bourbon barrels, after which it matures for another 24 months in ex-Cognac barrels made of French oak, in the cellars of Château de Bonbonnet/Cognac. This rum receives its finish for 10 months in Syrah (Côte-rotie) barrels.

Syrah is a grape variety originally cultivated in the Rhone Valley (France). Outside Europe, the variety is called "Shiraz".

This is one of the most important red grape varieties of all.
