Plantation Rums have long ceased to be an insider's tip. The excellent rums are mainly collected in the Caribbean and also in South America and then brought to France, where they receive their finishing touch. In Ars, France, the rum is then aged for several months in small, discarded oak cognac barrels. This type of aging is called "Double Ageing," a technique that was already used in the 18th and 19th centuries.
The Plantation Rum Trinidad 2008 is made from molasses and undergoes a three-day fermentation at the Trinidad Distillers Limited distillery.
In Trinidad, this rum ages for 11 years in bourbon barrels, after which it ages for another 12 months in ex-cognac barrels made of French oak, in the cellars of Château de Bonbonnet/Cognac.
This rum receives its finish for 1 year in Chardonnay wine barrels.
This very well-known white grape variety, with high quality potential, is widespread worldwide. Traditionally, Chardonnay wines come from Burgundy, but they are also produced in other parts of France, in Italy, or California. Chardonnay tastes harmonious, fresh, and mild.
