The winemaking process follows the classic method for white wines. Fermentation takes place slowly and without skin contact in temperature-controlled stainless steel tanks at 16 °C, which helps preserve the freshness and vibrant fruit aromas. After cold stabilization, the wine is gently filtered and then bottled. The entire process is carried out with high precision to preserve Mateus' characteristic style, delicate color, and balanced freshness in every bottle.
