The maturation takes place in two carefully coordinated phases: First, the grain and malt whiskeys mature separately in ex-bourbon casks, with a precise ratio of 3:1 in favor of the grain.

This initial maturation period can last up to six years and allows the whiskeys to develop their individual flavor profiles.
