Plantation Rums have long since ceased to be an insider tip. The excellent rums are primarily collected in the Caribbean and also in South America, then brought to France, where they receive their final refinement. In Ars, France, the rum is subsequently stored for several months in small, discarded oak cognac barrels. This type of maturation is called "Double Ageing," a technique that was already used in the 18th and 19th centuries.

Plantation Rum Australia Single Cask Sherry Palo Cortado Finish 2009 45% Vol. 0.7 l matures for 11 years in Bourbon barrels and then for 1 year in FERRAND barrels. This rum gets its finish in Sherry Palo Cortado Casks.
