Plantation Rums have long ceased to be an insider tip. The excellent rums are mainly collected in the Caribbean and South America and then brought to France, where they receive their finishing touch. In Ars, France, the rum is subsequently stored for several months in small, discarded oak cognac barrels. This type of maturation is called "Double Ageing", a technique that was already used in the 18th and 19th centuries.

This rum is a traditional pot still rum that undergoes a two-week fermentation. The rum matures for 8 years in ex-Bourbon casks. For the last 2 years, it receives its finish in the cool cellars of Château de Bonbonnet in used Ferrand casks.
