Sakari Shukugawa The Japanese Craft Gin combines the world of Japanese gin with the rich tradition of sake culture. Sakari draws on around 130 years of experience in sake production, which is directly reflected in the recipe. A distinctive feature is the alcoholic base: it is distilled from sake kasu, the rice lees left over after sake has been pressed. This allows a valuable by-product of sake production to be reused, whilst simultaneously creating a direct flavour link to the art of Japanese sake-making. Sugi, the Japanese cedar, is used as the defining botanical. Wood offcuts resulting from the production of traditional sake barrels are utilised for this purpose. This unusual combination gives Sakari Gin its distinctive Japanese identity.
Sake kasu and sugi are complemented by a carefully curated selection of Japanese botanicals. These include sansho pepper from Hyogo, shiso, hinoki cypress, yuzu juice and sakura blossoms. According to the producer, only juniper – an essential ingredient in gin – does not originate from Japan. Sansho adds lemony, spicy notes; shiso brings a fresh, herbaceous element; and hinoki combines citrusy notes with spicy, woody undertones. Aromatic yuzu and sakura blossoms capture further typical facets of Japan. At 41% ABV in a 0.7-litre bottle, Sakari Shukugawa is a modern, sake-based Japanese craft gin that combines traditional brewing culture, resource utilisation and regional botanicals. The gin is also vegetarian, gluten-free and free from preservatives.
