The Poli Distillery was founded in 1898 by GioBatto Poli and is now run by the four siblings Jacopo, Geampaolo, Barbara, and Andrea Poli. It is located in the northeastern Italian municipality of Schiavon in the province of Veneto.

Poli is known for unique grappas, but on October 15, 2013, decided to produce their first whisky in honor of the citizens of Veneto. This outstanding whisky is made from pure barley malt and hand-distilled with Atanor. The water used for the production of the whisky is of extraordinary purity and quality. It comes from Monte Grappa, which has been designated a biosphere reserve by UNESCO. The Italian malt is aged for 5 years in oak barrels, after which it undergoes a one-year finish in Amarone barrels.

The name "Segretario di Stato" and the depiction of St. Peter's Square on the whisky's label have been duly approved by the Secretariat of State of the Holy See.
