Amatiteña, inspired by the long tradition of agave cultivation in Amatitán dating back to the 18th century, is produced by Alberto Partida Hermosillo, an engineer and third-generation master tequilero from the Partida family. The brand honours the ancestral customs of Jalisco and the agave fields by maintaining traditional production methods.

The agave hearts are traditionally crushed using a tahona, a large stone wheel, and then cooked over an open fire to best preserve their sweet flavours. Fermentation takes place using wild yeasts, whilst the subsequent distillation in copper stills preserves the agave’s characteristic flavour.

After distillation, the tequila is aged for two months in oak casks, which makes it particularly well-balanced and harmonious, lending its flavour profile an extra depth.
