Traditionally, the agave hearts for Amatiteña Tequila Añejo are crushed with a tahona and then slowly cooked over an open fire to best preserve the sweet aromas. Fermented with wild yeasts and distilled in copper pot stills, the tequila develops a harmonious and complex note after 12 months of aging, delighting both connoisseurs and novices alike.
