Distillation takes place in both a Twin Column Still and the traditional Pot Still Old Gregg’s, resulting in a complex and structured distillate. The maturation of this XO rum with a Pedro Ximénez finish occurs as a blend of very old rums in various types of casks, including new white oak, ex-Bourbon casks, Ferrand Cognac casks, and casks with varying toast levels. For the PXXO edition, the rum undergoes a third refinement in noble ex-Pedro Ximénez sherry casks from Andalusia. This additional maturation gives the Planteray PXXO 20th Anniversary its characteristic nutty depth and elegant, raisin-like sweetness.
