The Kilchoman 100% Islay 11 Years Old Sherry Cask Islay Single Malt Scotch Whisky exemplifies Kilchoman Distillery's uncompromising farm-to-bottle approach. This bottling unifies all production steps entirely on the Isle of Islay, thereby earning the predicate "100% Islay" in its purest form. This Islay Single Malt Scotch Whisky was distilled from the distillery's own barley harvests of 2011, 2012, and 2013, before maturing for at least 11 years in carefully selected ex-Oloroso Sherry Butts. A total of 16 First Fill Oloroso Sherry casks were used, previously employed by José y Miguel Martin in Jerez, Spain, which lend the whisky a distinctive depth.


The Kilchoman 100% Islay Sherry Cask 11 Years Old was bottled at a robust 50% ABV, naturally without chill filtration and without added color. Compared to previous 100% Islay editions, which matured predominantly in ex-Bourbon casks, this sherry cask matured bottling exhibits a significantly darker and more structured profile. The long maturation in Oloroso Sherry casks underscores the independent character of the Kilchoman style and complements the typical Islay peat with depth, spice, and substance.
